• 3 egg whites
  • 1 tbsp coconut flour
  • 1 tsp sea salt
  • veggies (amount and type are your choice)
  • bacon (amount is up to you)
  • approx 1 tsp coconut oil or bacon grease for frying

Whisk the egg whites until very fluffy, add coconut flour and sea salt and combine well.

Add 1 tsp oil into skillet over medium heat.  Pour in egg mixture.

Cook until golden, flipping like a pancake.

When pancakes are cooked, add bacon and fry until the texture you desire.  Remove bacon and put aside with pancake.

Add veggies to the bacon grease and cook.

Place cooked veggies & bacon on top of pancake.


3 egg whites normally makes 1 pancake for me, but you can make smaller portions if you desire. I tend to like at least 1 cup of veggies (usually spinach and onions) and 2 slices of bacon.  You may want to add additional spices, again, based on personal preference.

You can omit the coconut flour if you do not have any, just make sure to whisk your eggs until fluffy.
