• 3 eggs + 1 egg white
  • 2 tbsp bacon grease – melted
  • 1/2 cup milk (coconut or raw whole milk)
  • 1/4 cup almond flour – fine grind
  • 1/4 cup coconut flour
  • 1 tsp salt
  • 1/2 tsp garlic granules
  • 1/4 tsp baking powder
  • 3 strips cooked bacon bits (1/2 strip per muffin)

Preheat oven to 400 degrees

Grease 6 muffin tins

Whisk eggs, bacon grease and milk in a small bowl

In a medium bowl, mix almond & coconut flour, salt, garlic and baking powder

Add the egg mixture to the flour mixture and stir until well mixed and no visible lumps

Fill the muffin tins 3/4 of the way

Add 1/2 a bacon stip to each of the muffins.

Using a knife (or your finger) gently swirl the bacon into the batter

Bake approx 15-20 minutes or until golden brown

COMMENTS: I used raw whole milk to prevent any coconut taste in the muffins
