- 3 eggs + 1 egg white
- 2/3 cup milk (coconut or raw whole milk)
- 1/3 cup pumpkin puree (not pumpkin pie puree)
- 1/4 cup coconut oil – melted
- 1/4 cup almond flour – fine grind
- 1/4 cup coconut flour
- 1 tbsp pumpkin pie spice
- 1 tbsp vanilla extract
- 1/2 tsp salt
- 1/4 tsp baking powder
Preheat oven to 400 degrees
Grease 6 muffin tins
Whisk eggs, coconut oil , pumpkin, vanilla and milk in a small bowl
In a medium bowl, mix almond & coconut flour, salt, pumpkin pie spice and baking powder
Add the egg mixture to the flour mixture and stir until well mixed and no visible lumps
Fill the muffin tins 3/4 of the way
Bake approx 15-20 minutes or until golden brown
COMMENTS: You can add an additional tablespoon of pumpkin pie spice for a bit more flavor, I like it with just a hint of pumpkin and kept it at 1 tablespoon. Once they were done baking, I sprinkled a few with coconut sugar for my daughter who’s not on the Sugar Detox. 😉
