This is a fairly quick recipe (for 2) that can be used for any meal or snack.  Pumpkin puree works just as well, if you’re on a 21 Day Sugar Detox or not a sweet potato fan.

  • 2 eggs + 2 egg whites
  • Sliced onions (just enough for the 2 servings…up to you)
  • 2 slices well cooked bacon – crumbled
  • 1/4 cup sweet potato puree
  • 1/2 tsp sea salt
  • 1/2 tsp ground black pepper
  • Bacon grease (or grease of your choice)

Pre-heat oven to 400F

Grease ramekins with grease and set aside

Mix 2 eggs, salt, pepper and puree in small bowl

In a separate bowl, beat the 2 egg whites until fluffy

Fold the egg whites into the egg & sweet potato mixture

Distribute the egg mixture between the 2 ramekins

Place bacon and onion on each of the egg mixtures and using a knife, slowly mix, incorporating it into the eggs

Place into the oven and cook for 10 minutes or until golden brown and “poofy”
