BUFFALO CHICKEN STUFFED BAKED SWEET POTATO

I love leftovers, I feel like an Iron Chef when I see food looming in my kitchen, they’re just waiting to be made into something fantastic.  This is a breakfast (or anytime meal) that can be made with any type of meat and 10 minutes of your time.

  • 1 large sweet potato 
  • 1 cup chicken, boneless
  • Buffalo wing cream sauce
  • sea salt
  • 2 tbsp ghee (or butter)
  • Bacon, cooked (optional)

Pre-heat oven to 375F

Wet the exterior of a sweet potato with water and rub lots of sea salt over it; place on baking sheet and bake for 1 hr, or until soft.

While the sweet potato is cooking; shred the cooked chicken in a medium bowl and mix with the Buffalo wing sauce.

Remove sweet potato from oven and carefully slice open; stuff 1 tbsp of ghee (or butter) inside the meat of each side of the potato.

Pile in the Buffalo chicken into the sweet potato, sprinkle with bacon and EAT UP!
