My daughter looooves Pho, a Vietnamese dish consisting of broth, fish sauce, rice noodles and veggies.  However, I do my best to stay away from rice noodles and came up with this quick alternative. I always have frozen cubes of broth in my freezer and almost always have some spaghetti squash around, so the recipe below is assuming you do too.

  1. On medium heat, combine broth and fish sauce in a pot and cook until almost to a boil.
  2. Add spaghetti squash to the broth mixture and cook for 5 minutes on low heat.
  3. Add meat and allow to warm up for an additional 1-2 minutes.
  4. Serve!

COMMENT: Make the night before, place in a mason jar and heat up in the morning for a quick breakfast on the go. Just remember, there’s fish sauce in it, so don’t spill 😉
