I love to make food stretch and when making my spiced coconut nog I decided to go ahead and use it as a pudding base too and came up with this little treat using chia seeds. When water is added, the chia seeds have a tapioca like consistency. Chia seeds have amazing health benefits. It’s said to keep a person hydrated, suppresses appetite and a complete protein. 

  • 1 c Spiced Coconut Nog
  • 1 c water
  • 1/2 c chia seeds
  • 1 tsp vanilla extract
  • 1/2 tsp ground allspice
  • coconut sugar or maple syrup to taste (optional)
  1. In large glass bowl, combine spiced nog, water, chia seeds, vanilla & ground spice, mix well.
  2. Place combined ingredients in the refrigerator for at least an hour to allow the chia seeds to absorb the liquid and double in size.
  3. Once you’re ready to eat, add coconut sugar or maple syrup to taste (optional)

COMMENTS: I leave the sugar out incase you’re doing a sugar detox or just trying to remove added sugars from your meals.  

When you first remove the pudding,  make sure the consistency is to your liking. You may want to add more coconut nog or water if it’s thick, or more chia seeds if it’s thin.  If adding chia seeds, only add 1/2 tsp at a time waiting 20 minutes in between, a little goes a looooong way.

I’m on a food allergy elimination diet and I have been craving sweets The only thing i’m unsure of is the vanilla extract and I wonder if it would work just as well with coconut milk with the spices added as opposed to the nog (because i’m not sure if it violates my “no eat” list.) but it sounds wonderful! great recipe!
